Some off the menu of Averau to protect themselves from the intense cold of these freezing days. Some special dishes not on the Averau menu have been created to face the bitter cold of these winter days. The year 2026 opens with a wave of low temperatures (it is advisable to consult the weather forecast for updates). To combat the rigors of the climate, our restaurant offers a selection of culinary specialties designed to warm the heart. Here’s what we’ve prepared for you:

MIXED BOILED

Mixed boiled meat, off the menu of Averau to protect yourself from the cold

Among our proposals, there is the mixed boiled meat, consisting of calf’s head, beef muscle, ox tongue, pork cotechino and capon. Each ingredient is cooked separately and served with horseradish (horseradish sauce), salsa verde and Dijon grain mustard.

CAPPELLETTI IN BROTH

In addition, we offer artisanal cappelletti stuffed with pheasant, served with mixed boiled meat broth to ensure further comfort for our customers. Cappelletti can also be presented dry, with Parmigiano Reggiano PDO, a mix of alpine herbs and melted butter. It is possible to combine them in an encore or trio with other first courses from our varied menu, accompanied by a selection of fine wines.

For the more adventurous who still want to enjoy the view from our panoramic terrace, in addition to our off-menu Averau to protect themselves from the cold, we have our Stammtisch with a lit brazier to give off a bit of numbness. The atmosphere of the lunch is made a little more magical by the warmth of the fire in the center, where conviviality meets our kitchen and guests sit and enjoy a few hours of pure and rare beauty on the terrace overlooking the Dolomites!
