The Averau Refuge celebrates the 8th March with beetroot, tradition and fantasy.

From 2 to 8 March, the kitchen of the Averau Refuge offers, in addition to the classic menu, the pink dish.

The Casunziei are a sort of ravioli filled with beetroots, on this occasion, however, with a strange twist: the dish is cooked with the same ingredients in reverse order, thus it has a delicate pink colour, as well as an enveloping taste. They are filled with parmesan, butter, hazelnuts and poppy seeds, while the dough is kneaded with beetroot, cooked flour sauce and white beets, which are usually put into the filling with beetroots.

New for 2025: The “pink dessert” is added to the pink dish. A Red Velvet, a very scenic cake of American origin and widespread all over the world. The dessert is composed of layers of bright red sponge cake alternating with a filling based on cream cheese.

Best enjoyed on the panoramic terrace with a stunning view of the Civetta and Marmolada mountains.

And for the evening of Saturday 7 March , the dinner will be enlivened by the sweet notes of the harpist SONIA DAINESE who will give a vibrant and delicate touch to the evening. All women will be honored with the most classic of the flowers of this occasion, the mimosa.
